The story
In 2014, Laura Vicente and Jordi Simón combined their surnames to create DVISI, a restaurant in Palamós that reflects their shared passion for food, hospitality, and discovery. The result is a space where the Mediterranean character of the Costa Brava meets influences from Asia and Latin America, all grounded in a deep respect for local products.
DVISI’s kitchen is described as “divergent” – it moves away from strict conventions to feel closer to its roots. The cooking is creative by nature, playing with flavours and textures that invite diners to explore new places without forgetting tradition. Seasonal ingredients from the region are essential, forming the backbone of a menu that changes with the harvest.
This approach earned the restaurant a Michelin Recommended distinction, a recognition that aligns with the thoughtful, ingredient-driven cooking that defines DVISI.
The tasting menu is an eleven-course journey through the chefs’ most iconic proposals. It includes four appetisers, five courses, and two desserts – dishes like grilled Gillardeau oyster with an aguachile pearl, slow-cooked eggs with Wagyu sobrassada, and a white chocolate, yogurt, and mandarin finale. Priced at €65 per person, it is served to the whole table at lunch and dinner.
For those who prefer to choose, the à la carte menu offers a broad selection of contemporary dishes. Standouts include salt-cured bonito with strawberry kimchi, red prawn aguachile from Palamós, and a dry rice with morels and foie. The wine pairings and the option to share plates reflect the restaurant’s belief that dining should be a shared, hedonistic pleasure.

The restaurant is open for lunch and dinner from Tuesday to Saturday, with a closed period for holidays in March, June, and September.
