The story
In Palencia, Ajo de Sopas takes its name from the classic Castilian garlic soup, but the kitchen is anything but traditional. Chef Alberto Soto describes himself as a romantic, constantly in motion, deeply in love with the culture and products of his homeland. “I have always believed that our gastronomy is a fundamental part of the cultural heritage of Castilla y León,” he says. At Ajo de Sopas, the team focuses on evoking new emotions, using the highest quality seasonal ingredients from the region, approached from an innovative point of view.
The menu is designed for sharing and discovery. Diners can expect creamy croquettes, molletes that melt in the mouth, and gofres (waffles) that are not what they seem. The result is modern cuisine that plays with form and expectation while staying rooted in local tradition. The restaurant offers two distinct spaces: the Teatro and the Invernadero, each with its own concept but united by the same philosophy.
This approach has earned recognition from the Michelin Guide, which lists Ajo de Sopas as a Recommended restaurant. The kitchen also holds a Sol Repsol award and has been named “Revelation Establishment” by the Maestros Hosteleros.
