The story
Adrián Quetglas was born in Buenos Aires but carries Mallorcan blood. His first job in hospitality was on the island, at a restaurant called Sa Roqueta. After a decade building his reputation in Moscow’s competitive dining scene—and working in London, Paris and Moscow alongside some of the best chefs internationally—he returned to Palma. Today, his eponymous restaurant on Passeig de Mallorca is the expression of that journey: a modern cuisine that filters global technique through a Mediterranean lens.
The kitchen offers two tasting formats. The five-step menu is described as an urban, accessible introduction; the eight-step menu unfolds as a singular journey of flavours. Both are, in the chef’s words, the essence of experiences lived between Mallorca, London, Paris and Moscow. A carefully selected wine list accompanies each course.
The restaurant itself balances comfort with polish. The website speaks of “el ambiente y las sensaciones” – the atmosphere and the sensations – and the space includes air conditioning, outdoor seating, and the capacity for private parties. A quote from Victor Pauchet frames the philosophy: “The most productive work is that which comes from the hands of a contented man.”
Adrián Quetglas holds a Michelin Recommended award (2026), a nod to the precision and personality of its cooking. The team aims to democratise fine dining, bringing author cuisine within reach without sacrificing depth. For anyone seeking modern cuisine in Palma that feels both personal and international, this is a restaurant built on lived experience.
