At Aromata, chef-proprietor Andreu Genestra and his team pursue a clear goal: to make high cuisine accessible to a wide audience. Located in the Hotel HM Palma Blanc in the heart of Palma, the restaurant offers a contemporary dining experience that balances ambition with warmth.
The kitchen, led by head chef Matias Stump, focuses on prime ingredients sourced from across the island. The menu changes to reflect what is best, with a strong emphasis on the raw product itself. By night, Aromata takes on a special atmosphere, offering a choice of the Aromata Degustation Menu, the ‘Sentits’ menu, or the vegetarian ‘Verd’ menu, alongside an a la carte selection. These are available for Saturday and Sunday lunch, and Tuesday through Saturday dinner. For those who want to explore the wine list, a pairing option is offered with the degustation.
