The story
Mombo is the most personal project of chef Gabriel Conti, who opened the restaurant in Palma de Mallorca in 2022. Born in Brazil to a family with Basque-Italian roots, Conti grew up in a home where gatherings around food were a way of honoring life. His professional path began in Florianópolis, then led him to Barcelona, where he refined his cooking and eventually taught management at the Autonomous University of Barcelona. His cooking is shaped by a deep respect for local ingredients, honest suppliers, and the authentic flavors he has encountered through his travels.
Located on Paseo de Mallorca, Mombo is described by its chef as a new gastronomic meeting place where vitality, energy, and art come together. The atmosphere is designed to be as memorable as the food — a space where flavors and mood shift together. The restaurant has earned a Michelin Recommended distinction, a recognition that aligns with Conti’s commitment to cooking that is both personal and precise.
