The name reflects silence in Sanskrit and marks an escape from industrial monoculture, guiding a kitchen that sources organic ingredients locally while avoiding additives, refined salt, and added sugars. This dedication to ecological responsibility secured three radishes from the We're Smart Green Guide, validating the restaurant's approach to food as medicine and a sacred gift from the earth.
The seasonal menu highlights vegetable-forward preparations such as beetroot ravioli served with goat's cheese and pistachios, or a tom kha soup featuring Romanesco and sweet potato purée. Heartier options include a creamy rice dish enriched with wild mushrooms and freshly grated summer truffle, alongside artichokes cooked in syrup accompanied by cured egg yolk and romesco.
