The story
In the lively Santa Catalina neighbourhood of Palma, Stagier Bar is a restaurant built on a simple idea: cooking with passion and heart, without pretension. The name itself comes from the French stagiaire — apprentice — a nod to the years of training its team spent in some of the world’s most celebrated kitchens, from El Bulli and Celler Can Roca to Pujol in Mexico and La Mar in Peru.
That deep experience is channelled into a menu that the restaurant describes as “tasty, simple and elegant.” It is a style of modern cuisine that draws equally on Latin roots and Mediterranean traditions. The result is a menu of tapas and sharing plates that feel both inventive and grounded. Look for dishes like an avocado cannelloni filled with lobster and chipotle, a sea bass and grilled octopus ceviche with rocoto tiger’s milk, or a tribute to Ferran Adrià: an olive and anchovy spherification. There are also heartier options, such as grilled Wagyu hanger steak with chimichurri and a smoked steak tartare.
The space itself is a bar and tapas restaurant, warm and unpretentious, with outdoor seating for those who want to soak up the Santa Catalina atmosphere. It is a place for diners who are happy to be guided — the restaurant’s own invitation is for “palates that want to let themselves go.”
Stagier Bar’s approach has not gone unnoticed. It holds a Michelin Recommended award, a recognition that sits naturally alongside the restaurant’s stated ambition: to offer high-level cooking that remains accessible and full of flavour. Whether you come for a quick bite at the bar or a longer dinner of several courses, the cooking here is driven by technique, curiosity, and a clear sense of place.
