The story
In June 2013, a small restaurant opened on Carrer de Sant Magí in Palma’s Santa Catalina neighborhood. With a tiny kitchen and a great deal of enthusiasm, Sumaq began its journey. A year later, it moved to its current, more spacious home on Carrer Cotoner, in the same vibrant district. The name itself comes from the Quechua word for “good, rich, delicious” – a fitting promise for what follows.
Chef Irene Gutiérrez leads the kitchen, drawing on Peru’s vast biodiversity to create a cuisine that travels from the Pacific coast to the Amazon and the heights of the Andes. Her concept is Peruvian fusion, grounded in a deep understanding of ingredients, nature, and culture, with a distinct touch from Mallorca. The result is a menu that feels both rooted and surprising.
Standout dishes from the website include a causa of confit duck with huancaina sauce – pressed potato filled with duck and avocado, accompanied by a creamy yellow chili sauce, corn, and Andean fresh cheese. There is also gratinated cod with lime cream and smoked oil over caramelized sweet potato purée, and an exotic mixed ceviche of salmon, corvina, and bluefin tuna with mango and avocado in leche de tigre – citrusy, sweet, and spicy all at once.
Sumaq has earned a Michelin Recommended award, a recognition that aligns with the care and precision evident in the cooking. The atmosphere is warm and welcoming, with both indoor and outdoor seating, and the restaurant is wheelchair accessible. It is a place where the flavors of Peru meet the spirit of Mallorca – and where guests are invited to connect, taste, and return.
