On Francisco Bergamín street in Pamplona, Alhambra has been a quiet anchor of local gastronomy for forty years. This is a restaurant that wears its history lightly, celebrating its 40th anniversary not with fanfare, but with a new menu built on a familiar principle: “nuevos tiempos, misma esencia” — new times, same essence.

At the stove, chef Javier Díaz Zalduendo leads a team that prizes evolution over revolution. Their method is grounded in respect for seasonal produce, a deep connection to the region’s roots, and the kind of kitchen harmony that comes only from years of working together. “What makes our cuisine unique and special,” Díaz says, “is the way we understand gastronomy: treating seasonal products with respect, giving importance to our roots, and basing our working method on the balance and understanding of the team.”

This philosophy is expressed across several menus. The Menú Degustación, at 107 €, is a thoughtful sequence that opens with a creamy coconut-leek soup with prawn and brioche croutons, then moves through lobster salad, a truffled ravioli, and a perfectly seared scallop before reaching a choice of main courses: beef tenderloin with foie gras and a tawny port agrodolce, deboned and roasted squab with a forest mushroom risotto, or low-temperature-marinated suckling pig with a rosé molasses and sweet garlic purée. The Menú Alhambra, at 85 €, follows a similar arc with dishes like a cylindrical egg with truffled parmentier and a hongo beltza veil, and a 24-hour confit black angus.

The restaurant’s steady, confident cooking has earned it a place in the Michelin guide, a recognition that feels less like an endpoint and more like a natural reflection of its daily work. Alhambra is a place for celebrations, for private events, and for quiet dinners alike — a space where the food speaks of the land and the hands that prepare it.
