The story
Converso is located in the historic Monasterio de Santa María de Valbuena, in the heart of the Ribera del Duero region of Peñafiel. The restaurant was conceived as a tribute to the land, its history, and its legacy, with each plate celebrating local ingredients transformed with creativity. This approach has earned it a Michelin Recommended distinction, a natural recognition for a kitchen that places the origin of its produce at the center of the experience.
The culinary vision is led by Miguel Ángel de la Cruz, a chef whose Michelin-starred career has made him a reference in Spanish haute cuisine. His philosophy is naturalistic, rooted in a deep respect for local, seasonal ingredients and a connection to the cycles of the earth. At Converso, ingredients come from the restaurant’s own garden and nearby producers, emphasizing freshness and flavor while keeping a low carbon footprint. The result is a sustainable gastronomy that honors the surrounding environment.
Guests choose between two tasting menus. Essentia offers a shorter yet intense journey of 10 plates, priced at 115€ (170€ with wine pairing). Centum is a more extensive narrative of 13 dishes, designed to be savored in full, at 130€ (195€ with pairing). Both menus showcase the authentic flavors of the Ribera del Duero, where nature and creativity merge. The team, from the chefs in the kitchen to the service staff, works to elevate each moment with careful attention to detail and thoughtful wine pairings.
