The story
M.B sits on the coast of Tenerife, inside The Ritz-Carlton, Abama, as the first restaurant in the Canary Islands to earn two Michelin stars. It has held that distinction for nine consecutive years. The kitchen is led by Chef Erlantz Gorostiza, a Basque native who trained at El Celler de Can Roca and with Quique Dacosta before taking over M.B in 2010. He interprets the culinary vision of Martín Berasategui—a chef with three stars of his own—through a lens of memory and innovation. Gorostiza describes the style as “cocina autor,” where personal philosophy and emotion translate directly onto the plate. The result is a contemporary Basque cuisine that plays with familiar flavours, altering textures, temperatures, and compositions to create something both surprising and deeply satisfying.
Two tasting paths define the experience. The M.B À-La-Carte (€180) lets guests choose a cold starter, a hot starter, a fish, a meat, and a dessert, or opt for smaller portions to sample more. The Menú de Gran Sabor M.B (€240) is a curated selection of the chef’s most expressive dishes. Recent offerings include soldier shrimp from El Hierro over a creamy almond purée, green gazpacho, and shiso sorbet; wild sea bass on a Thai sauce with langoustine tartare and crispy bones; and a wagyu mille-feuille with glazed turnip, hazelnut, and Comté. Desserts lean into playful textures, such as smoked corn ice cream over a salted caramel knot, cacao, and coffee. The meal concludes with a petit four cart, a refined selection of delicate confections presented tableside.
The dining room is elegant and refined, with a smart casual dress code—no sportswear, beachwear, or open-toed shoes (except appropriate ladies’ footwear). Children over four are welcome. The wine list is carefully curated to complement the menu, with pairings chosen for harmony. For a special touch, M.B offers a private stargazing picnic under Tenerife’s skies, paired with a local sparkling wine. Whether you choose the full tasting menu or the à la carte, each dish is a precise, creative expression of Basque tradition, elevated by the island’s setting and the team’s relentless commitment to excellence.
