The story
Monte is the personal project of chef Xune Andrade, founded in 2019 in the small mountain village of San Feliz, in the Lena valley of Asturias. The restaurant offers a contemporary interpretation of Asturian rural cuisine, working with product, memory, and creativity. Its philosophy is rooted in observation: the humid forest, the cider, the charcoal, the nearby orchards, and the small producers who sustain the landscape. Monte does not seek to replicate tradition literally but to listen to it and translate it into a personal language that is both modern and deeply connected to place.
With only five tables, Monte provides an intimate, personal service where the kitchen happens close to the guest, without artifice, with precision and calm. The setting is a renovated rural house surrounded by silence and greenery. The menu unfolds as a journey through the landscape: options include the 14-course "Ruta por el Monte", the 10-course "Paseo por el Monte", or a shorter weekday "Garbeo". The cooking revolves around slow fire, smoke, fermentations, embers, long stocks, vegetables, and acidity, blending contemporary techniques with references to other cultures that dialogue with the Asturian environment. The wine list, directed by Delia Melgarejo, focuses on small producers, Atlantic wines, and mountain projects, all chosen to accompany the narrative of the menu.
This honest, territory-driven modern cuisine has earned Monte a Michelin star, a recognition of its precise, emotional cooking. Monte is a place where luxury is defined as calm, detail, and authenticity, and where the goal is not to explain Asturias, but to cook it from within.
