The story
In Pozoblanco, in the heart of the Los Pedroches valley, Kàran Bistró is the personal project of chef Carlos Fernández and his partner Andrea. The name itself is a fusion of their names—Karlos and Andrea—and the word “bistró” signals a straightforward, welcoming approach to cooking. This is not a formal destination, but a “pequeña casa de comidas y vinos” (a small house of food and wine), where the focus is squarely on the ingredients of the dehesa.
The cuisine here is rooted in the landscape. Los Pedroches is the cradle of Iberian pork, and the bellota-fed pig is the restaurant’s flagship product. But Fernández’s cooking reaches beyond any single ingredient. He draws on the old recipes of the region—the dishes of the pueblos and the grandmothers—and applies modern techniques to them. The result is a menu that feels both familiar and fresh, where a humble piece of Ibérico stomach is ennobled through careful preparation.
Seasonality dictates the menu. In warmer months, the carta turns to fresh salads, salmorejo, and mazamorra, with herbs adding brightness to grilled meats. The restaurant also offers a tasting menu, designed to take diners through a progression of intense flavors and surprising textures. A recipe shared by the chef, “Solomillo a las brasas, foie, pimientos asados y ajo frito,” gives a taste of the kitchen’s style: bold, direct, and tied to the fire.
Fernández’s commitment to sustainability and proximity is absolute. Almost every ingredient comes from nearby producers—vegetables from the zone, Ibérico pork from the valley—and the restaurant works to minimize waste and support the local economy. This philosophy, combined with the quality of the cooking, earned Kàran Bistró a Bib Gourmand from the Michelin Guide, an award that recognizes good quality, good value cooking. It is a fitting nod to a restaurant that proves high-level Andalusian cuisine can come from the most humble of raw materials.
The atmosphere is relaxed and unpretentious, a reflection of the bistró concept.
