The story
In Ribadeo, on the coast of Lugo, Hotel-Restaurante Javier Montero is a family-run project where chef Javier Montero blends the lessons of his mother’s traditional cooking with a contemporary, creative approach. The restaurant describes its style as “cocina tradicional creativa” — a concept that honours the deep flavours of Galicia while bringing them into the present with precise technique and a lighter touch.
The kitchen is guided by the seasons and the local larder. Menus change according to what the market offers, with an emphasis on product, flavour, and texture. The tasting menu, named “As Catedrais,” is the fullest expression of this philosophy: a multi-course journey through Galician cuisine with a creative twist, built from ingredients sourced in and around A Mariña Lucense. For those with less time, a shorter “Menú Expres” is available on weekday lunchtimes outside peak season.
Wine is taken as seriously as the food. Tita, a member of the team, provides personalised advice to match each dish, completing the experience with humility and professionalism.
The restaurant is part of a small four-room hotel, and the atmosphere is described as personal, family-like, and calm. It is also a member of Turismo Slow, reflecting a commitment to unhurried, thoughtful hospitality.
