A restaurant by the sea, for the sea

On the wild Playa de Vega, a seven-kilometre stretch of sand in the village of Vega (population 40), Güeyu-Mar sits a hundred metres from the shore. The building was once the local school; in 2007, Luisa Cajigal and Abel Álvarez transformed it into a temple of Cantabrian seafood. The name is Asturian for “eye of the sea,” taken from a freshwater spring on the headland where locals once bathed.

The chef and his fire

Abel Álvarez is a self-taught cook who learned by doing. “I like fish, getting the maximum out of them,” he says. “I’m passionate about embers and fish.” At Güeyu-Mar, there is no paella, no rice at all – only the best of the Cantabrian catch, cooked over oak embers. Álvarez treats the fire as an ingredient: each piece is handled according to its fat content, its texture, its moment. He might open a fish, close it, or cut it into large pieces and grill them directly. The result is flesh that flakes and stays juicy, never dry.

What’s on the plate

The day’s selection is displayed on the counter: lubina, virrey, xarda, jurel, salmonetes, rodaballo – all chosen at their peak, just before spawning. Shellfish like quisquilla and berberechos appear when in season. A salpicón de bogavante, sharp with vinegar, might start the meal. The wine list is a surprise: a deep collection of white wines and champagnes that match the intensity of the grill.

A quiet kind of recognition

Güeyu-Mar holds a Michelin Recommended award, a nod to its uncompromising product focus. On Mondays, when the restaurant is closed, the dining room fills with other cooks who come to eat and learn. The setting – a terrace with sea views, a summer terrace, a private dining room – is as unpretentious as the cooking. This is seafood grill at its most honest, on a beach that feels a world away from everything.
