The story
In the tiny village of Sardas, a short drive from Sabiñánigo, a restored stone farmhouse holds one of the Pyrenees' most compelling dining destinations. La Era de los Nogales, led by chef Toño Rodríguez, earned its first Michelin star for its confident, original take on Modern Cuisine.
The restaurant's philosophy is direct: "Tradición o vanguardia? ¿Y por qué no las dos?" Tradition and vanguard walk hand in hand here. A classic stew might be deconstructed and reimagined, presented with the elegance and wit that defines the kitchen. The team, described as young but deeply experienced, is unafraid of ambitious challenges.
Dining at La Era de los Nogales is a choice between two distinct journeys. The "Coherente" menu offers 16 courses, a balanced narrative of new creations and signature dishes that have remained on the pass for years. The more expansive "Ambicioso" menu stretches to 22 courses, a full expression of the kitchen's creativity. Here, local produce takes center stage, served on bespoke, handcrafted tableware designed by the restaurant itself.
Both menus begin with an aperitif journey "De ruta por Aragón" and feature dishes like scallop with apple and cucumber, Aragón chicken with salsify, and locally sourced Ternasco de Aragón lamb. The "Ambicioso" menu adds items such as fresh pasta with langoustines and trout from the nearby Cinca river.
The setting is as essential as the food. The rehabilitated farmhouse retains the charm of natural stone, opening onto incredible views of the surrounding mountains. The team's stated goal is for guests to not only eat well but also to have a genuinely enjoyable time. This mix of serious, Michelin-starred cooking and a relaxed, welcoming atmosphere makes La Era de los Nogales a memorable stop in the Aragonese countryside.
