A few steps from Salamanca's Plaza Mayor, Bambú builds its cooking around two essentials: fire and sharing. Chef Jose Manuel Pascua leads a kitchen that describes itself as "credible, wonderfully imperfect" – a place where contemporary cuisine stays grounded in the raw materials and techniques that matter.

The heart of the restaurant is the bar, which they call the world's oldest show kitchen. Here, tapas and half-rations come out in a steady, rule-free flow designed for picking, sharing and enjoying. The menu balances a set of "untouchable" classics – a seared scallop, a truffled duck egg, their jamón ibérico croquette – with seasonal dishes that reflect the kitchen's restless creativity. Charcoal gives everything a direct, smoky honesty: a pork rib, a grilled octopus and prawn skewer, a perfectly charred artichoke with cauliflower toffee and pork jowl.

This honest approach earned Bambú a Michelin Bib Gourmand, an award that recognises good-quality, good-value cooking. It is not about fuss or formality.
