The story
At Tapas 3.0 in Salamanca’s historic centre, the kitchen honours the region’s culinary heritage while giving it a fresh, contemporary twist. The team describes their cooking as “cocina de tradición, siempre dándole el protagonismo al producto” – tradition-driven cuisine where the ingredient takes centre stage. Stews, the best of the sea, and the extraordinary from the land all come together in small plates that are “cocina de autor con corazón”: heartfelt, author-driven food.
The menu is built on the traditional recipes of the land, reinvented in form, size and presentation. The result is a series of “pequeños bocados llenos de ilusión” – small, hopeful bites. Among the photographed specialities are their celebrated bravas, a steak tartare, salmorejo, and callos (tripe). The kitchen also offers a “Tarta de Hinojosa” – a handmade cheese tart that has become a star of the dessert list, crafted one by one with the same care as the artisan cheesemaker that inspires it.
The restaurant operates two menus – Carta 3.0 and Carta 2.0 – plus a dedicated wine list, and also offers takeaway for those who want to enjoy the bravas at home.
Set on Sánchez Barbero street in the old town, the space uses natural materials and a Mediterranean decor that complements the food’s honest character. Tapas 3.0’s commitment to quality and creativity has earned it a Michelin Recommended distinction, affirming its place among Salamanca’s noteworthy dining destinations.
