The story
In the mountain town of Sallent de Gállego, Cambium Pirineos has opened its doors, bringing a personal and refined vision of cuisine to the Alto Gállego region. The name, Latin for "change," reflects both a personal transformation and the restaurant's philosophy of constant evolution. It also nods to the surrounding forests: in a tree, the cambium is the thin layer where new wood and bark are created—a space of permanent creation.
The restaurant is the project of a local chef who grew up in Sallent de Gállego and spent years cooking at the family business near the Portalet border, where he earned a Repsol Sun. Now, he has brought that experience home. "I'm coming down to my green valley," he writes, signaling a return to his roots.
The space itself is described as welcoming, a place to relax as if at home while taking in the mountain landscape. The cuisine is deeply tied to the Alto Gállego region, with influences from Basque, Catalan, and French traditions.
Cambium offers two main tasting menus that showcase local ingredients and technique. The Menú Degustación / Menú Summum is a nine-course affair, recommended for weekday lunch and available by advance request. It begins with house appetizers and moves through dishes like a brioche of Pirinean trout tartare with ash mayonnaise and pickles (a provincial tapa semi-finalist in 2023), a tiradito of lacquered sturgeon with mango and passion fruit, and a leek grilled over coals with romesco and autumn truffle. The main event is a lingote of Ternasco de Aragón IGP with demiglace and a potato millefeuille. It concludes with a creamy cheesecake made from local goat and sheep cheeses.
The shorter Menú Valle offers four courses with choices at each stage, including options like grilled scallop with American sauce and codium algae air, or a creamy carnaroli rice with boletus and wild langoustine. Both menus highlight the restaurant's commitment to fresh, quality ingredients from the region.
Cambium Pirineos has already been recognized with a Michelin Recommended award, a mark of its quality and consistent execution. The restaurant is open for lunch and dinner from Tuesday to Sunday, with a focus on providing a complete table service experience. The atmosphere is cozy and unhurried, designed for guests who want to savor a meal that feels both grounded in its place and open to the wider world of fine dining.
