The story
Pazo de Toubes is a restored rural manor from 1742, one of the few winery-pazos in Galicia that has been rehabilitated while preserving its full history. Stone, steel and wood fuse with the surrounding vineyards, immersing diners in nature as granite terraces filled with vines rise on either side of the restaurant. The setting is both historic and distinctly contemporary.
The kitchen follows a km0 philosophy, using organic, locally sourced ingredients. The restaurant is part of the Slow Food Compostela family, which means cooking with care for the link between the land and the plate. Vegetables come from their own garden; meats and fish are sourced from nearby farms and markets. The cooking respects traditional preparations while exploring modern techniques, resulting in a contemporary cuisine that is both honest and precise.
