The story
In the historic heart of the Real Sitio de San Ildefonso, a stone’s throw from the Royal Palace and its famous gardens, La Fundición occupies a building with an industrial past. During the 18th century, this space served as a plumbing workshop for the palace, forging the metal pieces that gave life to the fountains and crystal factories of the estate.
Three centuries later, the fire has been rekindled—this time, in the kitchen. The name “La Fundición” (The Foundry) is no mere decoration. The restaurant’s modern cuisine is built around the transformative power of fire, which the team describes as a force that “does not only cook; it transforms.” This philosophy honors the manual work and raw materials of the surrounding territory.
The menu at La Fundición is rooted in seasonality and local produce. Dishes change with the light and the climate, speaking the language of the land.
