The story
After two decades in the kitchens of Alain Ducasse, Hélène Darroze and Jean-François Piège, Chef Matthieu Michel Savariaud arrived in Ibiza with a clear vision. At Es Terral, he channels that experience into something deliberately personal: French technique applied to the island’s Mediterranean ingredients. The result is a cuisine that feels both refined and unpretentious – a feast of the French countryside with the flavours of Ibiza woven through.
Es Terral’s menu respects the product above all. Fresh, seasonal ingredients from local Ibizan growers define each dish, prepared with the precision of classic French cooking. The chef’s philosophy is rooted in honesty and humility – no unnecessary flourishes, just a deep appreciation for what the land and sea provide. This is French cuisine stripped of formality, focused instead on the joy of eating well.
The restaurant occupies a modest spot on Sant Vicent in Santa Eulària des Riu, with outdoor seating for warm Ibizan evenings and air conditioning inside for comfort year-round. Open Tuesday to Saturday for dinner, the atmosphere is relaxed and convivial – a place to linger over a meal that feels both special and approachable. The Michelin Recommended recognition, awarded in 2026, reflects the quiet confidence of a kitchen that lets the ingredients speak for themselves.
