The story
The name says it all. A Viaxe—"The Journey"—is the culinary autobiography of chef Tomás Rubio, told through a tasting menu that moves from his birthplace in Peru to his adopted home in Galicia. The result is a personal, vibrant style of fusion cuisine that earned the restaurant a Michelin Bib Gourmand for its quality and value.
Rubio’s cooking is built on a clear foundation: Peruvian roots, Galician producers, and global accents. The kitchen works primarily with seafood and vegetables from the local market, treating them with techniques and spicing that reference Rubio’s own travels. The restaurant describes its food as “cociña de matices”—a cuisine of nuances.
There are no à la carte choices here. A Viaxe offers two fixed tasting journeys: a 7-destination menu (€40) and a 9-destination menu (€48), both without drinks. The longer menu simply adds more stops along the route. The team notes that both menus are based mainly on seafood and vegetables, reflecting the Galician landscape and the chef’s preference for lighter, product-driven plates. A wine pairing is available to match each course.
The dining room, located on Praza do Matadoiro, is casual and welcoming, with options for counter dining, outdoor seating, and a terrace (supplement €2). The atmosphere matches the food: direct, personal, and unfussy.
Chef Tomás Rubio was born in Peru. His partner, Bianca Barbeira, completes the duo that runs the restaurant. Together, they describe their project as the encounter between two lands with strong gastronomic identities and deep respect for the product. The restaurant’s own tagline captures the spirit: "A Viaxe é unha cociña de alma peruana, corazón galego e matices do mundo."
