The story
Anaco is the personal project of chef Víctor Lobejón, a restaurant situated at the entrance to Santiago de Compostela’s historic quarter. The name itself – anaco meaning "a piece" in Galician – sets the tone: a place that aims to share un anaco de nós, a piece of themselves, and make guests feel at home. The kitchen is built on seasonal contemporary cooking with straightforward preparations that put respect for the ingredient first.
Anaco’s menu is anchored in a network of small local producers and artisans who supply the best of the Galician pantry. The cooking is clean and direct: dishes like sardines with peppers, artichokes with olives, or hake in pilpil sauce sit alongside more inventive combinations such as octopus with kimchi and Bertón cheese, or a carbonara made with green asparagus. There is a tasting menu called #amesaposta (55€) for those who want to let the kitchen take the lead, while the daily à la carte offers the freedom to choose.
The restaurant holds a Michelin Bib Gourmand – an award that recognises good quality, good value cooking – and the warmth of the welcome matches the precision of the plates.
