More than forty years ago, the first fire was lit with a clear idea: to honor Galician produce and cook it with respect, technique, and passion. That fire became the language of Asador Gonzaba, and Santiago de Compostela became the heart of everything they do. Here, the estilo Gonzaba was born—a way of understanding cooking where the product, the fire, and the people are the true protagonists.
This commitment to honest, quality cooking has earned the restaurant a Michelin Bib Gourmand, a recognition of its excellent value and good-quality food. The menu is built on pillars of Galician identity. Matured Galician beef, raised in the group's own livestock operation, is a cornerstone.
