The story
Indómito sits on Rúa do Doutor Teixeiro, steps from Praza de Galicia, in a space that balances warmth with a front-row view of the kitchen. The philosophy is direct: the product decides. Each morning, the team sources fish from the local auction, seasonal vegetables, and select meats, then builds an open-ended sequence of five or six savoury courses plus one or two desserts. There is no fixed tasting menu — instead, the kitchen tailors the meal to each table’s preferences and dietary needs. The price ranges from €55 to €75 per person, with a reference of €67.
Guests can choose between the counter, where they watch the cooks at work, or a quieter table for more intimacy. The cooking is live, but not theatrical — it is simply the daily work of a team that respects technique and seasonality. The restaurant describes itself as offering “cocina de mercado” with a personal, nonconformist take on Galician traditions.
