The restaurant’s most celebrated dish is the roast suckling pig, or cochinillo asado, which they call the standard-bearer of their menu and a cultural-gastronomic heritage of Segovia. José María sources its cochinillo from its own farm, Agrocorte Gourmet, and holds the “Cochinillo de Segovia” Denomination of Guarantee mark. For those unable to dine in, the restaurant offers a “Cochinillo Viajero” mail-order service, bringing the same quality to homes anywhere.
