This forward-looking approach aims to capture the soul of Seville in every plate, blending the region’s deep culinary traditions with refined, modern techniques.
The kitchen is led by chef Julio Fernández Quintero, whose passion for his craft and sensible, creative proposal are cited as key to the restaurant’s success. After training in Seville’s Taberna del Alabardero, he opened Abantal in 2004. His cooking is described as authentically Andalusian, “in the broadest sense of the word,” shining with innovative touches and a strong personal voice. In 2005 he was named Mejor Cocinero Andaluz, and his work continues to earn recognition, including a place on the OAD list of Europe’s top restaurants.

The name itself is a reference to the old Spanish word for “apron.” Abantal offers tasting menus that showcase seasonal, local products reinterpreted through polished techniques. The kitchen accommodates dietary needs, with vegan and vegetarian options available.
