Chef Enrique Caballero Baños personally travels daily to the fishing ports to select the day’s catch. He chooses every shrimp and prawn, ensuring only the best specimens reach the kitchen. While the focus is on local species, Jaylu also sources from trusted suppliers in Galicia and France—Gillardeau oysters, Carril clams, and scallops among them.
The menu is a celebration of seafood: raw bar selections, griddled langoustines, and giant red shrimp. A house specialty, monkfish with red shrimps flambéed with cognac (for two), exemplifies the kitchen’s ability to elevate simple ingredients with precise technique. Fritters, tartares, and classic Andalusian preparations like salmorejo with shrimps round out the offerings.
