Tradition and evolution on the plate

In the heart of Seville, on Cuesta del Rosario, Tradevo Centro brings a philosophy that its name makes plain: TRAdición + EVOlución. Chef Gonzalo Jurado, who trained alongside Carme Ruscalleda, Ferrán Adrià, and Santi Santamaría, applies that thinking to every dish. The result is cooking that is simple, emotional, honest, and elegant — made slowly, respecting the cooking times of each ingredient, and giving full prominence to the product itself.

Jurado’s aim from the start was to reinterpret the classic Spanish tapa. After opening his first Tradevo in the Nervión neighbourhood in 2010, he expanded to Tradevo Centro in 2016, responding to a loyal following that had grown quickly. The kitchen’s guiding principle is “producto, producto y producto.” That means seasonal and organic ingredients, sourced as close to home as possible. Fish arrives each morning from the auctions at Conil and Isla Cristina; artisanal flours come from a mill in Málaga; tomatoes from Almería; bread from Pablo Conesa. Meats are supplied by Discarlux, cheeses by Calaveruela, and the extra virgin olive oil by Basilippo — itself an award-winner.

The menu at Tradevo Centro is built around sharing — plates of high quality, prepared with care and presented in a way that feels both casual and refined. Jurado’s Andalusian roots are clear, but his approach is never static. Each dish is the result of careful study, where passion and knowledge meet the best raw materials of the moment. The wine list reflects the same philosophy, with a strong focus on Spanish denominations — especially the nearby sherry bodegas of Jerez, El Puerto de Santa María, and Sanlúcar de Barrameda — alongside selections from France, Argentina, Chile, and Hungary.

This dedication to ingredient quality and thoughtful technique has earned Tradevo Centro a Michelin Recommended distinction, a recognition that speaks to the consistency and integrity of the cooking.
