The story
On Calle Bailén in Seville, Chef Stefano Deidda runs a kitchen that follows the rhythm of the seasons without imposing limits. At Yo, Cocina Contemporánea, the approach is direct: narrate the local territory through the products nature offers, letting each ingredient speak for itself.
Deidda brings serious credentials to this contemporary restaurant. A graduate of ALMA, The International School of Italian Cuisine, he earned a Michelin star in 2017 at Dal Corsaro in Cagliari and was named Chef Emergente in 2010. That experience translates into a kitchen where technique serves the ingredient, not the other way around.
The menu is built around two tasting experiences. The "Menú Esencial" offers five carefully selected courses for a concentrated meal, while the "Menú Esencia" expands to nine plates that capture the full essence of the kitchen's vision. Descriptions are intentionally minimal—there's no attempt to over-explain. Instead, the food is allowed to reveal itself, plate by plate.
The space on Bailén 34 is designed for focused dining, with wine and beverage pairings available to complement the meal. The restaurant's recognition by Michelin as a Recommended establishment reflects the precision and clarity of what Deidda is doing here: contemporary cooking that respects its roots while looking forward, all within the heart of Seville.
