The story
According to tradition, Túbal-Cain, the first blacksmith and founder of Tafalla, brought the mastery of fire and the harmony of music to the town. Thousands of years later, Demetrio and Ascensión revived his name for a small establishment, beginning a culinary saga. Their daughter Atxen inherited the skill of taming fire under pots and ovens, passing it to her children Beatriz and Nicolás, who now run the restaurant with the same warmth and devotion.
At Túbal, the vegetable garden dictates the rhythm of the kitchen. The menu changes with the seasons: winter and spring stews, Navarre asparagus, artichokes, broad beans, and tender peas.
