A Michelin Recommended Address in Teguise

Palacio Ico brings the volcanic terroir of Lanzarote to the plate. Located on Calle El Rayo in the historic town of Teguise, this restaurant earned a Michelin Recommended distinction for 2026, a nod to its focused, locally driven cuisine.

Chef Víctor Valverde and His Roots

Executive chef Víctor Valverde trained under Martín Berasategui (three Michelin stars) and Sergi Arola (two Michelin stars) before bringing his experience back to the Canary Islands. His cooking is built on the island’s products – pitaya from Tinajo, prawns from La Santa, salmon from Uga – and applied with the precision he learned in San Sebastián and Madrid. Valverde was nominated Best Chef in the Canary Islands 2026, and his sommelier was nominated Best Sommelier in the Canary Islands 2025.

Tasting Menus and a Celebrated Wine List

Palacio Ico offers two tasting menus that change with the seasons. Menu 01 (€120) includes dishes like stracciatella from Gran Canaria with sun-dried tomato and basil, medregal in canarian adobo, and cherne (local fish) with pil pil and mojo. Menu 02 (€98) features crispy Lanzarote octopus with white sweet potato and mojo palmero, and black canarian pork cheek with smoked sweet potato. Both menus offer wine pairing options – Classic (€65), Premium (€89), and Experience (€285).

The wine list itself is an attraction: it won the Best Wine List Award in the Canary Islands 2025. It focuses heavily on Lanzarote’s volcanic malvasías and listán negro, with selections from across the archipelago and beyond.

A Setting for the Island’s Flavours

The restaurant is part of a hotel, with a calm, refined atmosphere. Service is for dinner from Monday to Friday, with lunch on Monday and Friday only. The kitchen works with Lanzarote’s best seasonal ingredients – from gofio crackers to smoked goat cheese ice cream – turning them into a clear, confident expression of Canarian cuisine.
