The story
Just a ten-minute walk from Toledo’s historic centre, El Albero has been a fixture of the local dining scene for over three decades. The restaurant has recently been revitalised under the direction of young chef Ismael Suleiman, who brings more than 17 years of culinary experience and training from Madrid’s Escuela de Hostelería to the kitchen. Suleiman’s approach is to take the traditional, Mediterranean-inspired cuisine of Castilla-La Mancha and apply refined techniques learned in renowned gastronomic kitchens, earning El Albero a place in the Michelin guide for 2026.
