The story
Perched on the slopes of the Cigarral del Ángel, the restaurant faces the city of Toledo and the Tajo River. It is a setting that defines the cooking: “We cook from the orchard and the riverbank, watching the sea from afar, celebrating the nearby mountains.” The kitchen draws on the layered culinary history of Toledo—a city that has long attracted travellers, artists and intellectuals—to create a modern cuisine that feels both rooted and original.
The restaurant works exclusively with tasting menus, each conceived as a narrative. The shortest is the midday menu (95€, available Wednesdays and Thursdays), followed by “Monte y Ribera” (12 courses, 165€), “Toledo Olvidado” (15 courses, 195€), and the signature “Memorias de un Cigarral” (20 courses, 235€). Optional wine pairings range from 75€ to 160€. All menus are served to the whole table, and reservations require a credit card guarantee.
Chef Iván Cerdeño, born in Toledo in 1979, leads a kitchen that values sabor, order, technique and innovation. His approach—revisiting traditional recipes to recover lost flavours—has earned him two Michelin stars and three Repsol suns, along with the Premio Nacional de Hostelería a la Innovación. The dining room team is described as communicative, close and friendly, each member trained in specific roles from service to sommelier work. Their goal is to make every guest’s experience at the cigarral thoroughly satisfying.
