In Toledo, culinary innovation has long been tied to a handful of names. One of them is Víctor Sánchez-Beato, the chef behind the acclaimed restaurant Locum. A little over three years ago, he created a restaurant model that was unprecedented in the city and across all of Castilla-La Mancha: a counter where he cooks live in front of his guests.
That idea, inspired by one of his trips to Japan before the pandemic, has been a notable success. It is not just the format that draws people in, but the chef's skill at delivering an honest, flavourful market cuisine. This is a new challenge that only someone with his experience could take on—someone who knows the products and the precision required for cooking live, in the moment. The restaurant seats just sixteen people at a time, all watching the kitchen work exclusively for them. The only option is a surprise tasting menu, built around what is fresh and seasonal. It includes four aperitifs, three starters, a fish course, a meat course, and a dessert. The price is €62.50 per person, not including drinks.
