The story
In the small town of Xerta, just outside Tortosa, Villa Retiro offers a dining experience rooted in the landscape of the Terres de l'Ebre. The restaurant, part of a five-star boutique hotel housed in a striking 1890 modernist building, is led by chef Fran López. Since 2009, his cooking has been recognized with a Michelin star, making it the only restaurant in the Baix Ebre region to hold that distinction.
Chef López, a fourth-generation restaurateur born in nearby l'Aldea, trained at the Hofmann Cooking School in Barcelona and later spent three years refining his craft with Alain Ducasse at the Plaza Athénée in Paris. He opened Villa Retiro with his family in 2006, and his cuisine has since become a reference point for the area.
The kitchen’s philosophy is grounded in the product and the market, balancing innovation with the essence of traditional Catalan cooking. The restaurant offers three distinct tasting menus. The “Classic Menu” presents a sequence of dishes such as oyster from the Delta with hibiscus syrup, a roasted duck cannelloni with truffled béchamel, and sea bass with sweet potato purée and grilled artichokes. The “Homage Menu,” created for the restaurant’s 20th anniversary, takes diners on a more elaborate journey that highlights local landmarks and ingredients—like a suquet of eel with saffron, or a tartar of duck marinated in the style of Kun-pho. A third option, the “More than a Homage” menu, expands the experience further.
The wine list is equally considered, with pairings available to complement each menu, and the restaurant’s connection to the region is deepened through its involvement with the Catedral del Vi, the historic wine cooperative in Pinell de Brai.
Dining at Villa Retiro is a quiet, unhurried affair. The setting—within a hotel originally built as a wealthy merchant’s retreat—lends itself to a sense of escape. The property’s gardens and terraces provide a serene backdrop, and the service is attentive without being intrusive.
