La Sartén takes its tagline seriously: Contemporáneo + Fusión = sin complejos – contemporary fusion without apologies. In Tres Cantos, just north of Madrid, this restaurant brings together techniques and ingredients from across the globe with a confidence that feels both playful and precise.
The kitchen leans into a wide range of inspirations, often with a Josper grill doing the heavy lifting. A Taco MX Ibérico pairs a crisp corn tortilla with ibérico pork cheek in a mild curry, chipotle mayo, and a quail egg. Baozi – steamed buns made in-house – are stuffed with braised oxtail, mint, coriander, and a Venezuelan guasacaca sauce. A Nikkei ceviche of corvina gets its kick from a rocoto and yuzu granita, while a Milhoja Coreana de Buey layers crispy wonton pastry with minced beef, tomato, and cardamom béchamel.
The menu also features a notable Josper section: a Volandeira XO, grilled and dressed with coconut cream and XO sauce, and a 24-hour slow-cooked lechal lamb glazed with its own juices, served alongside a kimchi mayo. Desserts keep the same energy – a warm cheesecake with violet ice cream, or a mango and passionfruit soup with white chocolate ganache and lemongrass.
That bold, cross-cultural cooking earned La Sartén a Michelin Bib Gourmand for 2026, a nod to good quality at a reasonable price. It’s a fitting accolade for a place that doesn’t try to fit into a single box – and clearly enjoys breaking them.
