Topero in Tudela delivers grounded Spanish cooking through a kitchen shaped by years of disciplined study across the Basque Country. José Aguado built this operation after learning hospitality alongside his father at Ferial Bardenas. He moved to San Sebastián at eighteen to train at the Luis Irizar culinary school, then accumulated station experience at Arzak, Urepel, Kursaal, Miramón, and Astelena. Leadership roles at Tubal and Rodero completed his preparation before he opened his own venues.
