The story
On the emblematic Plaza Primero de Mayo in the historic city of Úbeda, Cibus Renacimiento Culinario is a small, family-run restaurant that packs ambition and soul into its few square meters. This is not a poetic metaphor—the dining room is literally a measured, studied space, designed to offer an intimate and welcoming atmosphere with just a handful of tables. The idea is to make each guest feel cared for, special, and part of a very personal culinary story.
The kitchen is led by chef José Santiago, a Jaén-born cook whose professional path has taken him through Michelin-starred kitchens like Alejandro in Roquetas de Mar and other notable Andalusian restaurants. His style is defined as vanguardist, traditional, and different. He works with low temperatures and slow cooking, favouring local, seasonal ingredients and interpreting the flavours of "yesterday" with the techniques of "today." Alongside him, Magda Lázaro manages the front of house and the project’s creative direction, bringing a background in photography and graphic design to the restaurant’s identity.
The restaurant offers two tasting menus. The principal menu, "Renacimiento," is a 14-course experience inspired by historical recipes, weaving together flavours, aromas, textures, and even sound to awaken the legacy of local gastronomic tradition. A shorter "Legado" menu offers 9 courses for a lighter introduction to their cooking. Both menus are built around prime local ingredients, with a strong emphasis on the magnificent extra virgin olive oil (AOVE) of the region. Every dish is made from scratch, with a real commitment to sustainability and zero waste.
Cibus also offers two pairing options: "Alquimia," a selection of alcoholic drinks, and "Natura," a creative lineup of non-alcoholic beverages made in-house from herbs, fruits, and vegetables—a project born from the same research and commitment to natural products. This dedication to quality and a personal, attentive service has earned the restaurant a Michelin Recommended distinction, placing it firmly on the map for contemporary Andalusian fine dining in Úbeda.
