Chef Vicent Guimerà, who has led the kitchen since 2004, crafts a menu that draws directly from the surrounding landscape—the rice fields, sea, and mountains of the Delta de l'Ebre. Guimerà’s philosophy is one of essential truth: “La cuina no necessita artificis, només veritat” (Cuisine needs no artifice, only truth). This commitment to authenticity is supported by a seven-thousand-square-metre regenerative garden, which respects the cycles of the earth and nourishes a kitchen with deep roots. The result is a tasting menu that evolves with the seasons, featuring dishes like faves tendres i escamarlà (broad beans and langoustine) or calamar i sobrassada vegetal (squid and vegetable sobrassada).
