At El Visco, the restaurant of La Torre del Visco in Valderrobres, every meal is a direct expression of the land. The kitchen, led by chef Mónica Benítez, works with ingredients measured in meters, not kilometers: vegetables from the certified organic huerta, olive oil from more than 2,000 trees on the finca, and fresh fish from the Mediterranean. This commitment to place and season has earned El Visco a Michelin recommendation for 2026—a recognition that feels less like an award and more like a natural consequence of the restaurant’s daily practice.

The menu changes daily, shaped by what is harvested from the estate’s organic farm. Guests can choose from two formats: the “Menú El Visco,” a three-course selection (75 €) that includes a welcome aperitif and pre-dessert, or the “Crea tu menú,” a five-course tasting (95 €) where diners build their own experience from the day’s creations. Both are accompanied by freshly baked breads and the estate’s own organic olive oil. The cooking is a celebration of seasonal ingredients, natural flavors, and harmonious pairings—subtle, precise, and deeply rooted in the landscape.

The wine list, curated by the sommelier, is a moving document that speaks of the territory. It champions small local producers, from the entrenched garnachas to lesser-known varieties like morenillo, all with minimal intervention. For the full experience, the “La Despensa de las Mónicas” program (April to July) invites guests to walk the garden with Mónica Cuartero before returning to the dining room for a custom five-plate menu guided by chef Benítez.

The setting is as considered as the food. In winter, the elegant dining room looks out over the gardens, warmed by a fireplace. In warmer months, the terraces offer candlelit dinners under the stars. A pre-dinner vermú in the dappled shade of a tree or a post-meal petit four by the outdoor brasero completes the rhythm of a meal that feels unhurried, intentional, and entirely of its time and place.
