The architecture and enduring legacy

Established in 1836, Bodega Casa Montana in Valencia has served traditional Spanish tapas and regional wines for nearly two centuries. The current modernist facade replaced an original adobe structure during an 1880 renovation, preserving the building’s historic character through multiple generational transfers. Ownership passed from the founding Montaña family to successive proprietors before settling with Emiliano García Domene in 1994. His children, Alejandro and Maria Garcia Llinares, now manage daily operations while maintaining the establishment’s commitment to energy efficiency and circular economy practices, recently earning a four radish rating from the We’re Smart Green Guide.

The kitchen and traditional flavours

The menu relies on time tested preparations that have remained largely unchanged since the tavern opened. Guests encounter Mediterranean bluefin tuna marinated in seven distinct spices, alongside slow cooked michirones and stewed broad beans that echo local agricultural heritage. Acorn fed Iberian black label ham arrives paired with Zamora chorizo, while seasonal vegetables like stuffed Piquillo peppers and Piparra de Ibarra rotate according to availability. Every plate receives accompaniment from San Bartolomé Bakery bread, ensuring the Spanish tapas tradition remains grounded in Valencian sourcing rather than fleeting trends.

Wine selections emphasize Spanish appellations that complement the robust character of the house offerings. Dedicated staff curate bottles from D.O. Valencia whites and reds, Belondrade y Lurton from Rueda, Torremuga Rioja, and Quincha Corral from El Terrerazo. A glass of mistela drawn directly from the venue’s aging barrels provides a sweet counterpoint to savory charcuterie plates.
