A New Chapter in Valencian Haute Cuisine

Flores Raras sits on the first floor of a corner building in central Valencia, a space where the kitchen is built from stews, memory and sensitivity. Under the direction of Carolina Álvarez, the restaurant carries the technical rigor and DNA of Quique Dacosta, now expressed through a more intimate lens. This approach earned it a second Michelin star in 2026, a recognition of cooking that balances precision with emotion.

The menu draws from the local pantry but opens to the world, reinterpreting cookbooks and cultures through haute cuisine. Four tasting paths are offered: the flagship Flores Raras (six courses), a vegetarian option, the shorter Esencia (four courses), and the accessible 1988 (three courses). Each is a reflection of the kitchen’s philosophy—product, technique and hospitality in equilibrium.

The extraordinary wine list is curated by Hernán Menno, while Delia Claure oversees the dining room with warmth and attention. The result is a meal that feels personal, unhurried, and deeply connected to both place and memory.
