On Gran Vía del Marqués del Turia, Haku brings something unexpected to Valencia’s dining scene. Rather than a straightforward Japanese restaurant, this is a place where Italian culinary tradition meets Japanese precision — a fusion guided by the hand of chef Bo Jimmy Zhu.
Zhu trained at ALMA, the prestigious international school of Italian cuisine, and honed his craft at Roka Mayfair in London before leading the team at Kibo in Valencia. His background gives Haku a distinct personality: the menu moves from artisanal pasta to delicately prepared sushi, each dish balancing the richness of Italian flavours with the ingredient-focused clarity of Japanese contemporary cooking.
The restaurant opened in June 2024 and was soon recognised by the Michelin guide, a nod to the ambition and care behind the kitchen. The dining format is omakase — chef’s choice — served at the bar. Service begins promptly at 2pm for lunch and 8:30pm for dinner, with punctuality part of the experience.
Haku is intimate, designed for those who want to watch the cooking up close. The atmosphere is calm and focused, the kind of place where the meal itself is the event. With only a small number of seats, each service feels personal.
