Every day, the kitchen works with fish and seafood sourced from the finest local fish markets, carefully selected meats, and vegetables that follow the natural rhythm of the Valencian orchard. The result is a menu that celebrates the region’s bounty. Since opening in 2018, Llisa Negra has developed its own identity around dishes that have already become part of its history: rice dishes cooked in traditional paella pans, cured seafood specialties, spider crab salpicón, scarlet prawns with sea urchin emulsion, and a now-renowned cheesecake.
The à la carte menu is a journey through the Mediterranean. It begins with cold starters like emulsified spider crab “salpicón” with sour cream and veal tartare, then moves to warm starters such as a “lazy” garlic prawn omelette. The paella section—using Rice from Valencia D.O.—is a highlight, offering classics like the traditional Valencian paella and a duck & orange fideuà.
