The story
Nozomi Sushi Bar was born from the passion of Nuria Morell and José Miguel Herrera. In January 2015, they launched their most personal project, bringing a piece of Kyoto to Valencia. The name Nozomi means “the illusion of a dream come true” – a fitting description for a restaurant that has since earned a Michelin recommendation.
Every year, the couple travels to Japan to continue their training, returning with a deeper understanding of Japanese cuisine. Their dedication to authenticity is evident in every detail.
The team’s philosophy is simple: honesty and respect for the product and the client above all. They seek out the highest quality ingredients, which means the menu changes according to market availability. At the table, silence and respect are valued – a Japanese tradition they share with their guests. “We are a reflection of the human quality of our clients,” the philosophy page reads. The team is treated as family, and feedback is always welcome.
Nozomi offers two ways to dine: à la carte or the Omakase Menu, where the chef selects the evening’s offerings. The tasting menu is a showcase of classic Japanese techniques applied to seasonal produce. It begins with three Japanese starters (tsumami), followed by a tartar, a thinly sliced sashimi (usuzukuri), then ten pieces of nigiri sushi, a final dish (shime), and Japanese sweets (okashi). A sake pairing is available for those who wish to explore the extensive sake list – over 200 labels carefully selected to complement the food.
