The story
Chef Vicente Patiño leads Saiti with a clear ethos: "Cultura, sabor, tradición, innovación, producto, ilusión, sueño, respeto…" The kitchen balances classic Valencian technique with a light hand of modernity. Menus are renewed four times a year, following the rhythm of the seasons. The restaurant works with local, ecological suppliers and actively reduces waste, earning the "Molt de Gust" award for promoting the region’s finest agro-food products. This is a restaurant that knows where it comes from.
Three tasting paths are available. Raíces (€48, weekday lunch) leads with snacks, shared starters, a rice or stew of the day, and dessert. Na Germana (€75) and Lo Rat Penat (€95) build with more courses: five starters, fish, meat, and two desserts for the former; seven starters for the latter. The house recommends Lo Rat Penat. Wine pairings (short €60, long €80) are drawn from a cellar with over 140 references, selected by the sommelier to match the modern cuisine.
Saiti operates in Valencia’s Eixample district, open for lunch Tuesday–Saturday and dinner Tuesday, Thursday, Friday, Saturday. The dining room welcomes private events and caters for special occasions. A wheelchair-accessible space, it also offers takeaway during the holidays.
