Twenty-four years ago, the team behind Tastem opened their doors with a clear mission: to bring Japanese culture to every corner of Valencia. Now, that same team – led by chef Ulises Menezo – has reinvented itself. Shinkai Tastem is the natural evolution of that original vision, a place where the passion and energy remain intact, but the experience has been refined. The name itself signals a fresh start, yet the core commitment to Japanese cuisine and hospitality endures.
Shinkai Tastem is not just a meal; it is a journey. The tasting menu, available by reservation at 14:00 or 21:00, is described as “an experience that transports us to the heart of Japan, its essence and its culture.” Guests can choose between counter dining (for a front-row view of the chefs) or a table. The menu, priced at 80 euros (excluding drinks), unfolds in careful stages: from edamame and a sea bass usuzukuri with truffled ponzu, to a Shinkai tartar of tuna with avocado, crispy tempura flakes, and ikura. A procession of sushi follows – nigiri of sea bass, yellowtail, sardine, flambéed salmon, tuna, and even A5 Japanese Wagyu – before a main course of miso-marinated black cod grilled over charcoal. The meal closes with a green tea tiramisu and a lemon sorbet with shiso and sake.
