Among the standouts, one dish has earned national acclaim. In 2024, Vuelve Carolina’s patatas bravas were named Best Creative Bravas Potatoes in Spain at Madrid Fusión. The competition was fierce, but the jury selected Gonzalo Silla’s interpretation.
These are not the diced potatoes you might expect. Instead, they are small, crispy fritters, creamy inside, designed to be eaten in one bite. The brava sauce is layered with smoked ham oil, garlic, onion, sweet-and-spicy paprika, cumin, chipotle, house-made fried tomato, and meat jus. A subtle allioli nods to the restaurant’s Valencian roots, and a thin slice of smoked Iberian pork jowl rounds it out. It’s a dish that respects tradition while pushing it forward.
